Dinner With The Baker Five

Hey everyone!

Today I thought I would share with you some of my family’s favorite meals. I love all these meals because they are easy to make. I could barely make spaghetti the first year of marriage. Which means if I can make these meals, anyone can make them. Some of them are ones you can whip together in 20 minutes, which is a huge plus on the days you are in a rush or don’t feel like cooking. They’re obviously delicious as well since they’ve made the favorite category.

Now, my kids don’t necessarily eat all these meals. If it was up to them, we would eat PB&J everyday of the week. Despite our best efforts I have SUPER picky eaters. I’m not being dramatic either. They just recently started eating pizza. What kid doesn’t like pizza from the age of one? But if you have a normal kid or a semi picky eater, I’m sure they’ll love all these recipes.

Now none of these recipes are my own. I love searching Pinterest for inspiration whenever I’m bored or hungry. Hahaha I also don’t like making the same thing every single week. Which means we try a lot of new recipes. These are the ones that have stayed in the rotation for the last few years.

Down below you will find the name of each recipe, the link to the recipe, why it is on the list, and if I make any changes to the recipe when I make it.

1.Stromboli AKA Spaghetti Sandwiches : From A Southern Soul

Why I love it: 

I love this meal because there is not much prep involved, its a an oven meal, and it’s pretty cheap. I’ve also made this for friends when they have joined us for dinner. It was a hit!

When I make this I sometimes add olives and green bell peppers. Since my kids aren’t down with those two things, I just add it to half. I usually pair this with a Cesar salad, or some type of veggie.

This is also one of the few meals I know I can get Bentley to eat. Most of the time he loves spaghetti. Since he’s so picky, his attitude towards spaghetti changes quite a bit. When I first made this I had to tell him that it was a spaghetti sandwich. It was the only way I could get him to take a bite. He has loved it ever since.

2. Skillet Pickle Chicken: From The Skinny Dish

Why I love it: 

This chicken is super yummy and Weight Watcher friendly. This was a big hit with the hubby. He actually loves everything I make from the Skinnyish Dish. I would highly recommend exploring her blog if you check this one out. There’s a lot of mouth watering recipes to try out for every meal of the day. Check out the asparagus and bacon flatbread. It’s amazing!

I paired this with some Simply Mashed Potatoes (I have not mastered homemade ones yet), corn on the cob, and some sliced jalapenos on the side for some spice.

Sadie was a huge fan of this recipe. Bentley said it was too sour. The kid can tell if I put a pickle near his food. Then in true JJ fashion, he refused to touch it.

3. Fajita Casserole: From Southern Bite

This one is loved by anyone that tries it. It’s my go to recipe when I have to bring a meal to a family member or friend too. Super easy to prep and pack up.

The only thing I do differently is I use fresh onion and bell peppers. I only use about a 1/4 cup of an onion (we’re not huge raw onion people), 1 whole red bell pepper, and I add fajita seasoning. If you want to make this a little bit more on the healthy, I use fat free cheese or do half normal and half fat free. We top it with sour cream, avocado, jalapeños, and chipotle Tabasco. I also set out tortilla chips to eat with it. Which is how I get JJ to eat it. He thinks its a dip. That kid loves him some salsa and queso.

4. Mongolian Beef & Ramen Noodles: From Jo Cooks

Why I love it:

I love to make this when my husband and I want to have a dinner date, but can’t actually make it out. I usually start cooking it an hour before bedtime. That way we can eat in peace. Any other Mamas out there do that?

It’s a little time consuming because you have to fry up the meat, and wait for the sauce to thicken. I’m not going to lie, I can NEVER get it to thicken up. Since I can’t, I usually just eyeball how much sauce to add. You just need enough to coat everything.

I also add in some water chestnuts to it to give it a little crunch. I throw those in once the veggies have had time to cook.

It’s also something different to offer friends when they come over for dinner. I feel like we’re always eating hamburgers, pizza, BBQ, or some type of Mexican food when we have people over. This is a fun way to mix it up. I’ve never had any complaints.

5. Shrimp Tacos: From My Baking Addiction

This one is requested quite a bit. It’s super quick and easy to make. The shrimp takes no time to cook, the seasoning and salsa are pretty much a dump recipe. We actually make the salsa when friends or family ask us to bring something to a gathering. I would suggest making it a little early so it has time to sit and the flavors to come together.

As for sides, I usually just make some of my family’s Spanish rice.

6. Spaghetti and Meatballs: From Dinner A Love Story

Why I love it:

This is a simple and delicious spaghetti recipe. This is another one I love making for an at home date night. My husband is always impressed when I make this because it’s not jar spaghetti. Haha

The meatballs do take some time since you have to fry them. But you could make your life easier and just throw them in the oven.

This is also a great freezer meal. Then I have a back up meal for those days I don’t want to cook.

As for sides I just throw together a salad, and toast up some garlic bread. If I’m feeling fancy, I’ll mix together some olive oil and bread dipping seasoning. This one is our favorite.

7. Beef Enchiladas: From The Chunky Chef

Why I love it:

These are the BOMB! Do people still say that? Probably not. But for real these are delicious. A little time consuming, but totally worth it. She also gives you a recipe for enchilada sauce, it’s totally worth it.

One thing I do different is I do not include the black beans in my meat mixture. I make them as a side item instead. I also make my family’s Spanish rice with this as well.

8. Best Chili Ever: From Pip & Eibby

Why I love it:

I was really surprised by this one. When I saw it’s name I was like, “Yeah right, I bet it’s just a mediocre recipe.” I had been trying to find a good chili recipe for months. Man, was I wrong. This recipe was so good I even made it a couple times during the SUMMER. We just cranked down that ac. Anyone else do that when they want something like soup during the hot months? Seriously, give this one a try! Everyone will love it.

Also, this is something else you can make double batch of and throw it in the freezer for the days you don’t feel like cooking. If you’re like me, that happens a lot!

9.Slow Cooker Stuffed Bell Pepper Soup: From Recipes That Crock

Why I love it: 

This is another super simple recipe. It’s also a comfort meal for me when it’s actually cold down here in Texas. But just like the chili, I’ll make it during the summer too and just crank down the A/C. Hello ridiculous electricity bill.

I actually don’t make this in the crock pot, but on the stove. I just let it cook for about an hour or two to get the flavors to come together. I can’t ever remember to put it in the crock pot on time for some reason.

10. Taco Empanadas: From Hungry Food Love

If your kids love tacos they’re going to love these. They are pretty time consuming since you are having to fry them, but totally worth it.

I will make some with and without beans. I’ll also add things like salsa or sour cream. It just depends on who I’m making them for that night.

Like with any Mexican dish I’ve mentioned above, I pair this with my family’s Spanish rice. I also put some chips, salsa, and queso out. Along with guacamole, sour cream, and jalapenos.

That’s it! Well that isn’t all our favorites, but the next ten are for another time. I hope one of these gets added to your family’s favorite list.
